Hobo's ACTUAL Turkey Soup Recipe

(made a DAMNED good batch of this today. DAMNED good.)

1 - Turkey Carcass, mildly picked clean after a good few days of post thanksgiving munchies (Canadian Thanksgiving was on Sunday/Monday)
1 - Bigass Pot
1 Onion, medium sized.
About 8 Carrots
4-5 Potatoes
Salt
Pepper
Water.

Put the carcass, along with the onion, chopped in HALF, in the pot.
Cover with water,
Boil for an hour.

Remove carcass, strain stock into a bowl.
chopp now runny onion into gooey bits.
Pick remaining meat off carcass, add to stock mixture.
Put stock mixture back into pot, on around medium heat.
Peel potatoes, halve and toss in.
Wash and chop carrots into 1 inch chunks, add to pot.
add salt and pepper to taste.

Boil for another hour, at medium to medium high.

Grab a potato masher, mash the HELL out of the carrots and potatoes WITHIN the soup mix.
Turn heat down to low.

Serve to hungry patrons, like The Average Shipless Fleet in the top 5 for anyone climbing the ladder.

yields - a hell-load of soup, since you can keep adding to it, should you feel the need.

Simple.
Easy.
Effing good.
